Old-Fashioned Oatmeal Cake
Introduction
Old-fashioned oatmeal cake is a classic, moist dessert that’s rich, slightly spiced, and topped with a warm coconut-brown sugar frosting. It became popular as a budget-friendly homemade cake that uses pantry staples but delivers deep flavor and a soft, comforting texture.
Ingredients
For the cake
- 1 cup rolled oats
- 1 1/4 cups boiling water
- 1/2 cup unsalted butter (softened)
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 tsp vanilla extract
For the topping
- 1/2 cup butter
- 1 cup brown sugar
- 1/4 cup milk
- 1 cup shredded coconut
- 1/2 cup chopped nuts (optional, walnuts or pecans work well)
- 1 tsp vanilla extract
Instructions
Step 1: Soften the oats
Pour boiling water over the oats and let them sit for about 20 minutes until soft and thickened.
Step 2: Make the batter
In a mixing bowl, cream together butter, brown sugar, and granulated sugar until smooth.
Add eggs and vanilla, mixing well.
Stir in the soaked oats.
In a separate bowl, combine flour, baking soda, cinnamon, and salt. Gradually mix dry ingredients into the wet mixture until fully combined.
Step 3: Bake the cake
Pour batter into a greased 9×13-inch baking pan.
Bake at 350°F (175°C) for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
Step 4: Make the topping
While the cake is baking or just after it comes out of the oven, melt butter in a saucepan.
Stir in brown sugar and milk. Bring to a gentle simmer.
Remove from heat and mix in coconut, nuts (if using), and vanilla.
Step 5: Finish the cake
Spread the warm topping over the hot cake.
For extra flavor, place it under the broiler for 1–2 minutes until the top is lightly caramelized (watch carefully to avoid burning).
Tips for Best Results
- Let the oats fully soften for a moist texture
- Pour topping while the cake is warm so it soaks in slightly
- Store covered at room temperature for up to 3 days
