Homemade Pita Bread

Ingredients
- 3 cups all-purpose flour
- 1 cup warm water
- 2 teaspoons active dry yeast
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 tablespoon olive oil
Instructions
1. Activate the Yeast
In a bowl, mix warm water, sugar, and yeast. Let it sit for 5–10 minutes until it becomes foamy.
2. Make the Dough
Add flour, salt, and olive oil to the yeast mixture. Mix until a soft dough forms.
3. Knead
Knead the dough on a floured surface for about 8–10 minutes until smooth and elastic.
4. First Rise
Place the dough in a lightly oiled bowl, cover, and let it rise for 1–2 hours or until doubled in size.
5. Shape the Pitas
- Punch down the dough and divide into 6–8 equal pieces
- Roll each piece into a ball, then flatten into circles about ¼ inch thick
6. Second Rest
Let the shaped dough rest for 15–20 minutes.
7. Cook
Oven method:
- Preheat oven to 230°C (450°F) with a baking tray inside
- Place pitas on the hot tray and bake for 5–7 minutes until they puff up
Stovetop method:
- Heat a skillet over medium-high heat
- Cook each pita for 1–2 minutes per side until puffed and lightly browned
Tips for Perfect Pita
- High heat is key to getting the signature pocket
- Do not over-roll the dough—keep some thickness
- Keep cooked pitas covered with a cloth to stay soft
