Rocky Road Fudge (Chocolate Fudge with Marshmallows and Nuts)
Rocky road fudge is a rich chocolate dessert made with a dense fudge base mixed with marshmallows and nuts. It is simple to prepare, requires no baking, and sets in the refrigerator.
Ingredients
- 400 g sweetened condensed milk
- 300 g dark or milk chocolate (chopped)
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- 1 cup mini marshmallows
- 1/2 cup chopped nuts (walnuts or peanuts are most common)
- Optional: pinch of salt
Instructions
Step 1: Prepare the pan
Line a square baking dish (8×8 inch or similar) with parchment paper, leaving some overhang for easy removal later.
Step 2: Melt the chocolate mixture
In a saucepan over low heat, combine:
- condensed milk
- chopped chocolate
- butter
Stir continuously until the mixture becomes smooth and fully melted. Do not allow it to boil.
Step 3: Add flavoring
Remove from heat and stir in vanilla extract and a small pinch of salt if using.
Step 4: Add mix-ins
Let the mixture cool for 2–3 minutes so it is still soft but not too hot. Then gently fold in:
- marshmallows
- chopped nuts
Mix until evenly distributed.
Step 5: Set the fudge
Pour the mixture into the prepared pan. Spread evenly and press lightly to level the surface.
Step 6: Chill
Refrigerate for at least 3–4 hours, or until fully firm.
Step 7: Slice and serve
Lift the fudge out using the parchment paper and cut into small squares.
Storage
- Store in an airtight container in the refrigerator for up to 1 week
- Can be frozen for up to 1 month
Variations
- Add crushed biscuits for extra texture
- Use white chocolate for a sweeter version
- Add dried fruits such as cranberries for contrast
- Sprinkle sea salt on top for a salted fudge version
